THE HARVEST

 

Handpicking within the Cardwell Hill vineyards ensures that only quality clusters are selected. Great effort is taken to eliminate all leaves that would influence the tannins and taste. Within two hours of the filling of each harvest bin, destemming operations are initiated. As a further quality assurance measure, the workers re-examine the clusters as they proceed along a slow-moving conveyor belt. Even the destemmer machine is carefully adjusted to maintain the wholeness of the berries that fall into 2-to 2.5-ton, open-topped, stainless steel fermentation tanks.
